Guard Your Health With Celery

Celery is much more than just a salad ingredient! It was first used as a medicine and then later as a food. It can be eaten raw or cooked. It can be eaten on its own, sliced or chopped to add to salads, soups, casseroles, stir fries or other dishes.

Celery is available throughout the year and it has many health benefits making it perfect to add to your weekly food choices. Research has shown that celery may contain blood pressure reducing properties. It contains active compounds called Pthalides which relax the muscles of the arteries that regulate blood pressure allowing these vessels to dilate. Pthalides also reduce stress hormones which can cause blood vessels to constrict.

Celery is low in saturated fat and very low in cholesterol. It is also a good source of riboflavin, vitamin B6, pantothenic acid, calcium, magnesium and phosphorus and a great source of vitamins K and A, folate, potassium and dietary fiber. Celery is also an excellent source of vitamin C with all its health benefits. Vitamin C can help support the immune system and reduce cold symptoms or the severity of cold symptoms during the winter months.

Celery should be stored in the refrigerator. You can store any leftover celery by wrapping it in cling wrap or storing it in an airtight container. Keep celery that is going to be eaten raw away from raw meat, poultry or seafood and from the kitchen tools used with the meat, poultry or seafood. You should rinse and clean celery well before eating it fresh or cooking it. To wash celery, pull a celery stalk off the bunch and rinse it under cold water, rubbing with your fingers or a vegetable brush to remove any dirt. Trim off the wider part at the bottom and the top part with the leaves. You can use the top part as celery sticks or chopped up in a salad, casserole or soup. Cut the cleaned and trimmed stalk into sticks or small pieces.

Being used as medicine first, celery is packed full of health benefits, so it is worth adding a bit to your daily meals.
